Mango Peda

Mango Peda
Well, we bought some yummy mangoes and I just couldn't resist making a sweet(yes,even a dietitian has her moments of weakness,but the important thing to keep in mind is "MODERATION"!!). A peda is traditionally made by reducing milk in an open pan and then adding the required amount of sugar and flavoring. A lot of people use "khoa" which saves a lot of time. Since I couldn't find khoa here,I decided to try it with ricotta cheese instead,and it actually turned out quite well!!
Ingredients: (Makes about 4-6 nos.)
  • Ricotta cheese(fat free): 2 cups
  • Mango puree: 1 cup
  • Sugar: 6 teaspoons (or according to taste)
  • Cardamom powder: 1/4 teaspoon
  • Pistachio slivers/ Canned cherries/strawberries: for decoration
Method:
  1. Heat a non-stick pan and pour the mango puree along with the sugar and cardamom powder and saute till it the puree appears to be cooked.
  2. Add the ricotta cheese and stir continuously on medium flame till it becomes a thick mouldable mass.
  3. Allow to cool,then shape into desired shapes and garnish.

it must be yummy with ricotta cheese.........i belong to banaras , the land of mangoes and we use mangoes in all possible forms......right now i am avoiding them though.

Thanks for the entry! Not only do these sound great, but they look so pretty too. Glad to hear that the ricotta works. I've never had this type of sweet and would love to give it a try.

That looks great!

My favorite thing is just getting frozen mango chunks (no peeling required!) and mixing them with orange juice for a great tasting smoothie!

That brussel sprout dish sounded great. I really love brussel sprouts, but didn't used to love them either.

As for mangoes, it's funny I was reading your blog and thinking "I just cut two mangoes!" I added them to my salad and also made a smoothie. Yum.

thaks sweta ...but as far as mangoes are concerned, we UPeans are so fond of them that we like to consume 6-7 mangoes at one go , we make a lot of calorie rich deserts with them, see my aam malai post at my banaras blog........so it's best to avoid them right now .........i eat them in controlled portions though as i am not giving up any of my fav foods.

hey sweta! just to answer your question on the quinoa...I think there was still a faint bitter taste to the quinoa-corn muffins...but wasn't that unpleasant at all!

They look so cute.....yesterday I bought a mango.....I started wondering: what happened to the food these days? A mango doesn't smell like a mango I knew when I was still a kid, a pear has no hint of aroma of a pear.....really disappointed...that mango tasted like wax.

This looks sooooo good! It's great that you were able to find an ingredient substitution that worked so well. Thanks for the link about khoa, which is something new for me but I saw that it is used to make gulab jamun, one of my all-time favorite desserts (I always get in trouble if I am at buffet because I take more than I should!)
