<b>Ashgourd Majjigehuli (Wintermelon curd curry/ Ashgourd Morukulambu)</b></div>
Ashgourd (Kumbalkay in Kannada, Kumhda in Hindi, Vellai Poosanikai in Tamil) is a common and highly revered vegetable in India. It is also used in Hindu religious ceremonies. <br />
It is supposed to be a light vegetable and easy to digest, so best for those who find it difficult to digest heavy foods. <br />

<strong>Ingredients for the majjige huli:</strong><br />
<ul>
<li>Ashgourd/Wintermelon: 500gms cut into cubes </li>
<li>Coconut: 1 cup grated(fresh/frozen)</li>
<li>Channa dal/split chickpeas: 1tbsp soaked in water for 1/2hour (optional)</li>
<li>Green chillies: 2-3</li>
<li>Cumin seeds/zeera: 1tsp</li>
<li>Mustard seeds: 1tsp</li>
<li>Yogurt/ curd: 1 cup (should be slightly sour)</li>
<li>Water: 2-3 cups</li>
<li>Salt: to taste</li>
</ul>
<strong>For the tempering:</strong><br />
<ul>
<li>Mustard seeds: 1tsp</li>
<li>Cumin seeds/zeera: 1tsp</li>
<li>Urad dal: 1tsp</li>
<li>Curry leaves:3-4 nos.</li>
<li>Oil: 1tsp</li>
</ul>
<strong>Method:</strong><br />
<ol>
<li>Boil the Ashgourd/Wintermelon in just enough water till half done.</li>
<li>In the meanwhile grind the coconut,green chilies, the soaked channa dal(optional), mustard and cumin seeds till you get a fine paste (add a little water when grinding).</li>
<li>When the ashgourd/Wintermelon is half cooked add the ground masala and a cup of water and let it boil.</li>
<li>Add salt, yogurt and another cup of water and cook for a minute or two.</li>
<li>In a separate pan, heat the oil and add the mustard,cumin and the urad dal. Wait till the mustard starts to pop, add the curry leaves , then pour the tempering over the majjige huli and mix.</li>
<li>Serve the majjige huli hot with <a href="https://www.myindiandietitian.com/indian-dietitian-online/how-to-cook-red-parboiled-rice-rosematta-oorpel-ari/">parboiled rice</a> or regular rice.</li>

For those who will be stuck in the heat, and have been planning to lose weight since the New Year, here are five reasons why summer is the best time to put your weight loss plans in action: Easy to stick to a diet plan: with no relief from the heat, fried, greasy, heavy food is probably the last thing you want to eat! That itself cuts out a lot of calories from your diet! Fruits and salads are so much more appealing:the water content in fruits and veggies makes it all the more delicious during summer. This not only adds much needed fibre to the diet, but also helps in keeping your body hydrated. You could lose extra calories by just drinking icecold water-yes, scientists now suggest that drinking ice cold water may burn a few extra calories as the body has to raise the temperature of the ice water to the bodies temperature! This may or may not be true but drinking 10-12 glasses of icecold water a day can’t add calories as water is a great zero-calorie drink. No festivals until August-so that means no excuses of having to break the diet due to festival binging! From now until Krishna Janmashtami (10th August), you can focus on your diet! Exercising in the heat could burn more calories-this is the principle behind ‘hot yoga’ (Bikram yoga)! Supposedly, exercising in the heat burns more calories since it makes the heart pump harder to your extremities to help you lower your body temperature, which rises fast in hot weather. This is a quick and easy recipe that is my go-to when I’m in a hurry or when I’m just feeling too lazy to make an elaborate dish with palak/spinach. I call it my ‘Lazy spinach stir-fry’ which I make often as everyone seems to love it and I never have any leftovers now matter how many bunches of palak I use to make this.</div>

Spinach/Palak: 2-3 bunches (washed, dried and chopped into small pieces)</div>

Roasted peanuts: 1 big handful (crushed coarsely)</div>

Red chili flakes: 1-2 tsp (or as per heat tolerance)</div>

Method:</div>

<li style="box-sizing: border-box;">Heat the oil in a kadai, add the chopped ginger. Then add the red chili flakes and the chopped spinach leaves and saute on high heat till the water evaporates.</li>
<li style="box-sizing: border-box;">Keep stirring and switch off the kadai when the spinach is wilted. Switch off.</li>
<li style="box-sizing: border-box;">Mix the crushed roasted peanuts and salt.</li>
<li style="box-sizing: border-box;">Add a dash of lime and mix.</li>
<li style="box-sizing: border-box;">Serve the easy spinach and peanut stir fry as a side to rice and dal.</li>

Dining out need not be taboo for health freaks or those who are on the proverbial diet. You don’t have to stop socializing or be stuck with a salad when the rest of the gang is polishing off the food like there is no tomorrow. With a little information, some smart choices and the determination to stick to portion sizes, you too can enjoy a healthy meal while dining out.</div>

While every cuisine has its unhealthy quota of foods, there also are foods that can easily fit into the ‘healthy’ list. Regardless of which restaurant you choose, here are some general guidelines by dietician <a href="http://www.thehealthsite.com/author/sweta-uchil-purohit/" rel="noopener" style="background-color: transparent; box-sizing: border-box; text-decoration-line: none;" target="_blank">Sweta Uchil-Purohit</a> to make healthy choices when ordering North Indian food.</div>

Ask for water instead of juices, mocktails, aerated or alcoholic beverages. There’s no point in adding extra calories when you can drink nature’s zero-calorie drink – water.</div>

Avoid fried foods, desserts and food made of refined flours: Pass on the <em style="box-sizing: border-box;">pooris, bhaturas, pakodas, naans </em>and <em style="box-sizing: border-box;">roomali rotis</em> and look for healthier options like whole wheat <em style="box-sizing: border-box;">rotis</em> or <em style="box-sizing: border-box;">phulkas.</em> Desserts are loaded with both sugar and fat and are best to be avoided.</div>

Go for plain rice: Since most restaurants don’t serve brown or semi-polished rice, your only option is to ask for plain rice. This is definitely a better choice than <em style="box-sizing: border-box;">biryanis </em>or <em style="box-sizing: border-box;">pulavs.</em></div>

Ask for your food to be made without oil, butter, <em style="box-sizing: border-box;">ghee </em>and <em style="box-sizing: border-box;">malai</em>: Since most restaurants are now familiar with the health conscious crowd, they are more than willing to make changes to their dishes to keep their clientele happy. Be firm and put in your request while placing the order and hopefully your food will be cooked with less oil if not with ‘<a href="http://www.thehealthsite.com/fitness/is-your-cooking-oil-making-you-unhealthy/" rel="noopener" style="background-color: transparent; box-sizing: border-box; text-decoration-line: none;" target="_blank">no oil</a>’.</div>
<div style="box-sizing: border-box;">
Always order a non-creamy soup and a salad (no dressing): This is an age-old trick used by weight watchers. Fill-up your stomach with non-creamy or thin soups and salads (without the mayonnaise dressing) and you won’t be able to eat much during the main course.</div>

Choose items that are baked, grilled or steamed: These are healthy methods of cooking that don’t add extra calories to the dish. <em style="box-sizing: border-box;">Tandoori </em>items, <em style="box-sizing: border-box;">shashlik</em>, grilled <em style="box-sizing: border-box;">kebabs </em>are all healthier choices than fried items.</div>

Choose tomato based curries: These are lower in calories than the<em style="box-sizing: border-box;">malai</em> or cashew based curries. <em style="box-sizing: border-box;">Rajma, chole</em> and even fish or chicken cooked in tomato gravy is a better option.</div>

By replacing it with ‘and’ you remove the conflict and simply find a solution to do both. Maybe you’ll chose to eat something before going to the party or chose wisely or control the portion size at the party. Look for a qualified dietitian who has worked at least a couple of years in a hospital. Most dietitians who have worked in a hospital know the dangers of crash dieting and are vary about prescribing the same to clients.</li>
<li style="box-sizing: border-box;"><b style="box-sizing: border-box; font-weight: bolder;">Do they recommend fad diets?</b> Some websites push fad diets (fruit diet, juice diet, GM diet,Cabbage diet ) to show immediate results. But remember-these results don’t last. Not only that, there is a danger of nutritional deficiencies and severe hair loss after sometime. Do you really want that? Or would do you want something that helps you keep the weight off forever? It’s your choice-but it’s your body that will pay for what you choose!</li>
<li style="box-sizing: border-box;"><b style="box-sizing: border-box; font-weight: bolder;">Are the Indian Diets planned for you or are they chosen from previously printed plans? </b>Diets need to be planned, not printed off the internet. It’s like going to the doctor and getting a check-up and by google. Would you really do that? You want something that is specific to you-one size does not fit all in the case of diets!! So don’t be fooled by websites who take money to dole out pre-planned diet charts.</li>
<li style="box-sizing: border-box;"><b style="box-sizing: border-box; font-weight: bolder;">Will the weight loss Indian diet be planned according to your eating habits?</b> Again what’s the point of eating something which you are not used to eating? For example-if you are a South Indian and the diet planned is a typically North Indian diet. It’s just not right for you.</li>

Zunka/Junka is a common Maharashtrian dish which is also known as pitle/pitla in some places. The basic dish is made with besan/chickpea flour and water with a tempering of onions, ginger and garlic. This simple and quick dish is mostly eaten with bakhri made from either rice or jowar.</div>

Ingredients for Cabbage Zunka:</div>

<li class="ingredient" style="box-sizing: border-box;">Cabbage- 2 cups (finely chopped)</li>
<li class="ingredient" style="box-sizing: border-box;">Onion- 1 cup (finely chopped)</li>
<li class="ingredient" style="box-sizing: border-box;">Besan(chickpea flour)- 1/2 to 3/4 cup</li>
<li class="ingredient" style="box-sizing: border-box;">Garlic pods: 3-4</li>
<li class="ingredient" style="box-sizing: border-box;">Turmeric- 1/4 tsp</li>
<li style="box-sizing: border-box;">Hing/Asafoetida: a pinch (optional)</li>
<li class="ingredient" style="box-sizing: border-box;">Chili powder- 1-2 tsp(as per your spice tolerance)</li>
<li class="ingredient" style="box-sizing: border-box;">Garam masala- 1/4 tsp</li>
<li class="ingredient" style="box-sizing: border-box;">Coriander leaves : 3 -4 tbsp (finely chopped)</li>
<li class="ingredient" style="box-sizing: border-box;">Oil- 2-3 tbsp</li>
</ul>

<ol style="background-color: white; box-sizing: border-box; font-family: "Open Sans", sans-serif; font-size: 16px; margin-bottom: 1rem; margin-top: 0px;">
<li style="box-sizing: border-box;">Heat oil in a kadai and add the smashed garlic and hing(optional). When it turns slightly brown, add the onions and saute till the onions turn translucent.</li>
<li style="box-sizing: border-box;"> Then add turmeric, chili powder, salt and stir fry for a few seconds.</li>
<li style="box-sizing: border-box;">Add the cabbage and mix well such that the spices coat the cabbage evenly.</li>
<li style="box-sizing: border-box;">Cover and cook. The cabbage will go soft and release its own juices after about 7-10 minutes.</li>
<li style="box-sizing: border-box;">Now quickly stir in the besan/chickpea flour and saute gently on medium heat. Make sure there are no lumps of the flour. The besan will absorb the juices and cook.</li>
<li style="box-sizing: border-box;">Cover and cook on low heat for another 4-5 minutes.</li>
<li style="box-sizing: border-box;">Now open the cover, check that everything has been cooked well and mixed. The besan should give out a wonderful cooked aroma.</li>
<li style="box-sizing: border-box;">Garnish with lots of chopped coriander and serve hot with rotis or even hot rice, dal and pickle.</li>

<li style="box-sizing: border-box;">Heat oil/ ghee in a kadai and add the cubed capsicum and saute for 5-8mins. Keep aside.</li>
<li style="box-sizing: border-box;">In the same kadai, add the onions and saute till translucent. Then add the chopped tomatoes and cashews and saute for about 5 mins till the tomatoes look cooked. Switch off and let this cool.Then puree this in a blender.</li>
<li style="box-sizing: border-box;">In the same kadai add a little more oil, then add the turmeric powder,green chili, jeera, bay leaves, cardamom and cinnamon stick and saute for a few seconds.</li>
<li style="box-sizing: border-box;">Add the puree, red chili powder, coriander powder, garam masala and stir fry till the oil separates.</li>
<li style="box-sizing: border-box;">Add the peas and mushrooms and saute for a few seconds. Add a cup of water and mix well.</li>
<li style="box-sizing: border-box;">After it starts to boil,let it simmer till the gravy has thickened.</li>
<li style="box-sizing: border-box;">Add the paneer and the sauteed paneer and mix well.</li>
<li style="box-sizing: border-box;">Switch off and garnish with finely chopped coriander leaves.</li>
<li style="box-sizing: border-box;">Serve hot with rotis or even with jeera rice.</li>

Another Gluten free rice pulav recipe. The addition of coconut milk gives a different flavour to the pulav, You can add turmeric if you don’t like the white colour of the pulav-but I don’t add it as it makes the pulav look different.</div>

This can be made in a pressure cooker or even in the rice cooker. I normally fry it in a kadai and then transfer it into the rice cooker and add water and let it steam. I know many who even do the frying of the onions and veggies in the rice cooker itself-but I prefer to do it separately.</div>

In the meanwhile , heat 2 tsp of ghee in a kadai /pressure pan and add the whole spices (cumin seeds, pepper, cinnamon, etc) and saute for a few seconds.Then add the green chilies and cashews.</div>

Add the mixed veggies and saute for a 1-2 minutes(if using the rice cooker, then make sure to saute it for a little longer till the veggies are half cooked)) .</div>

Add the ginger garlic paste and saute till the raw aroma of ginger and garlic goes away.</div>

Drain the water from the soaked rice and add it to the kadai and fry for a few minutes (if making in a rice cooker, now would be the step to transfer from the kadai to the rice cooker).</div>

Add the coconut milk, salt to taste add 1 tbsp chopped coriander leaves and mix well.</div>

Once the pressure drops, open the lid and gently fluff the pulav.</div>

Heat oil/butter in a kadai and add the cumin/jeera, cinnamon, cardamom, cashews ,slit chili(optional)</div>

Then add the turmeric powder, sliced onions and the ginger garlic paste. Saute till the onions start turning brown.</div>

<li style="box-sizing: border-box;">Add, the mixed vegetables and stir fry till the vegetables are almost cooked.</li>
<li style="box-sizing: border-box;">In the meanwhile, boil some water with a tsp of oil in a saucepan. Once it boils switch off,add the rice noodles/vermicelli(broken into smaller pieces) and let it sit for 2 minutes and then drain and keep aside.</li>

Add the chopped tomatoes ,salt and saute until the tomato turn soft and mushy then add the pav bhaji masala, chili powder.</div>

Saute until the oil is released from the masala paste.</div>

Add the rice noodles/vermicelli and mix well to coat every strand of the vermicelli with the masala.</div>

Squeeze some lime juice, mix well and garnish with chopped coriander leaves.</div>

Serve the Rice vermicelli tawa pulav with raita or as is.</div>
